As a kid I grew up eating Banana Fritters, I always looked forward to seeing the bananas start to ripe because I knew it meant fritters would come along at some point. Seems to be a Grenadian staple in the house as it's the only thing you can do with the over ripe bananas lying on the counter..
So as I'm training I can't over indulge on those treats like I used to and came up with a healthy alternative that quite frankly taste satisfyingly similar
Sooo, I will be showing you how I make these delicious Banana and oatmeal pancakes, I like to eat these on days where I am going to do alot of Cardio, I usually need something quick in the morning that will give me enough energy to burn, They are so delicious and SOO quick and easy to make!
They are flourless so this keeps my bloating down! So we are replacing the flour with rolled oats
which are high in fibre and contain vital minerals such as magnesium and zinc.
Right
You will neeeeed
A Large FREE RANGE egg :)
2 Bananas
Some Rolled oatmeal I sorta just grabbed two handfuls..(does anyone have time to measure)
Cap full of Vanilla Essence
Half a teaspoon of Baking Powder
Combine all the ingredients together in a bowl
Lightly oil the pan and set on a medium heat
Take large spoonfuls of the mixture and spread out a little.
Let one side start to turn golden and then flip to brown the other side, should take around 4-5 minutes each side!
Garnish with fruits and syrups of your choice,
I chose Banana and Honey!
Hope you enjoyed this healthy alternative to a West Indian Banana Fritter
